I Dunno if you could call Demon Hunter metal or metalcore but I think they're damn good.

 

I'd count Demon Hunter as metal, I used to really like them, but find them a bit dull now though.
Haste the Day are pretty good, Burning Bridges has some songs that absolutely slay (Blue 42 and American Love FTW) though their stuff since changing vocalist isn't so great.

Oh, speaking of which, if you like old HtD or post-metal, or hell just metal, check out their old singers new band Trenches. Just awesomely heavy and epic stuff.

 

Yeah, they are considered Metalcore or more specifically "Christian Metalcore".

 

I think He Is Legend deserve a mention in here. New album due soonish.
